Prepare the Dough

Mix Dry Ingredients
In a mixing bowl, combine 2 cups of all-purpose flour, 1 tsp of baking powder, and 1 tsp of salt. Whisk together until well mixed.

Add Wet Ingredients
Add 1 tbs of unsalted butter and 3 tbs of milk to the dry ingredients. Mix until the dough comes together. If the dough is too sticky, add a little more flour.

Knead the Dough
Turn the dough onto a lightly floured surface and knead for about 2-3 minutes until smooth. Cover with a clean towel or plastic wrap and let it rest for 15 minutes.

Assemble the Filling
Take 12 cocktail sausages and set aside. Grate 1 cup of cheddar cheese and also set aside.

Roll Out the Dough
After resting, roll out the dough on a floured surface to about 1/8 inch thick. Cut the dough into rectangles, approximately 3x4 inches.

Fill the Dough
Place a cocktail sausage and a small amount of cheddar cheese on one end of each rectangle. Roll the dough over the sausage and cheese, sealing the edges by pressing them together.

Preheat the oven to 375°F (190°C). Place the assembled pig's in blanket on a baking sheet lined with parchment paper.

Brush each pig's in blanket with the beaten egg and sprinkle sesame seeds on top.
