Cook the Steak
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the flank steak with salt and black pepper. Cook for about 5-7 minutes on each side until it reaches medium doneness. Remove from heat and let it rest.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes until the vegetables are tender. Add minced garlic and cook for an additional minute.

Add Cheese
Tear the provolone cheese into pieces and add it to the steak and vegetable mixture. Stir until the cheese is melted and well incorporated.
Rolling the Spring Rolls

Prepare the Wrappers
Lay a spring roll wrapper on a clean, flat surface with one corner pointing towards you. Place about 2-3 tablespoons of the filling mixture in the center.

Roll the Spring Roll
Fold the bottom corner over the filling, then fold in the sides. Roll tightly towards the top corner. Seal the edge with a little water.

Repeat the process with the remaining wrappers and filling.

Fry the Spring Rolls
In a large frying pan, heat oil over medium heat. Fry the spring rolls in batches until they are golden brown and crispy on all sides, about 3-4 minutes. Remove and drain on paper towels.

Mix Sauce Ingredients
In a small bowl, combine soy sauce, sriracha, and honey. Mix well to create the dipping sauce.
