Method

Crust Preparation

  1. 1

    Combine Ingredients

In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

  2. 2

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Use the back of a measuring cup to pack it tightly.

  3. 3

    Bake the Crust

Preheat your oven to 350°F (175°C). Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Filling Preparation

  1. 4

    Mix Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

  2. 5

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until fully combined.

  3. 6

    Add Vanilla and Eggs

Mix in the vanilla extract. Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.

  4. 7

    Pour Filling into Crust

Pour the cream cheese filling onto the cooled crust, spreading it evenly with a spatula.

  5. 8

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Topping Preparation

  1. 9

    Prepare Strawberries

In a small bowl, combine the sliced strawberries with granulated sugar and lemon juice. Stir well and let sit for about 10 minutes to macerate.

  2. 10

    Top the Cheesecake

Once the cheesecake is completely cooled, arrange the macerated strawberries on top before serving.
