Chicken Marinade

Prepare the Chicken
In a bowl, combine the pesto sauce, olive oil, salt, and black pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.
Asian Slaw

Make the Slaw
In a large bowl, mix together the shredded cabbage, shredded carrots, and sliced green onions. In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and sugar until the sugar dissolves. Pour the dressing over the slaw and toss to combine. Let it sit for about 10 minutes to allow the flavors to meld.
Spicy Aioli

Prepare the Aioli
In a small bowl, mix the mayonnaise, Sriracha sauce, and lemon juice until well combined. Adjust the spice level to taste by adding more Sriracha if desired.
Grilling and Assembly

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).

Assemble the Sandwich
On the bottom half of each toasted bun, place a grilled chicken breast, followed by a generous portion of Asian slaw, slices of heirloom tomatoes, and caramelized onions. Spread a layer of spicy aioli on the top half of the bun and place it on top to complete the sandwich.

Serve immediately with a side of mixed greens or pub fries.
