Method

Cooking the Pasta

    Boil the Water

    In a large pot, bring 4 liters of water to a rolling boil. Add 1 teaspoon of salt to the water.

    Cook the Pasta

    Add 400 grams of linguini or spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve a small cup of pasta water for later use if needed.

Preparing the Pomodoro Sauce

    Sauté the Garlic

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and sauté until fragrant, about 1-2 minutes.

    Add Tomatoes

    Add 800 grams of canned whole tomatoes to the skillet. Break them up with a spoon and bring the mixture to a simmer.

    Season the Sauce

    Add 1 teaspoon of salt and freshly ground black pepper to taste. Stir in 1 cup of fresh basil leaves.

    Simmer the Sauce

    Let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens.

    Serve the Sauce

    Toss the cooked pasta with the pomodoro sauce and serve topped with 100 grams of shaved parmesan cheese.

Preparing the Primavera Sauce

    Sauté the Garlic

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté until fragrant, about 1-2 minutes.

    Add the Vegetables

    Add 1 diced zucchini, 1 diced bell pepper, and 1 julienned carrot to the skillet. Sauté for about 5-7 minutes until the vegetables are slightly tender.

    Add Cherry Tomatoes

    Add 200 grams of halved cherry tomatoes to the skillet. Cook for an additional 3-4 minutes until they soften.

    Season the Sauce

    Season with 1 teaspoon of salt and freshly ground black pepper to taste. Stir in 1 cup of fresh basil leaves.

  5. 13

    Serve the Sauce

    Toss the cooked pasta with the primavera sauce and serve immediately.
