Preparation of the Beef Roast

1. Prepare the Beef

Preheat your oven to 450°F (230°C). Take the beef roast out of the refrigerator and let it sit at room temperature for about 30 minutes.

2. Season the Beef

Pat the beef roast dry with paper towels. Rub the olive oil all over the roast. Then, season generously with kosher salt, black pepper, minced garlic, and chopped rosemary.

3. Prepare the Salt Crust

In a large bowl, mix the kosher salt with water until it resembles wet sand. The mixture should hold together when squeezed.

4. Create the Salt Crust

Spread a layer of the salt mixture on the bottom of a roasting pan. Place the seasoned beef roast on top of the salt layer. Cover the roast completely with the remaining salt mixture, pressing down firmly to form a crust.

5. Roast the Beef

Place the roasting pan in the preheated oven. Roast the beef for 45-60 minutes, depending on your desired level of doneness (use a meat thermometer: 125°F for rare, 135°F for medium, and 145°F for medium well).

Finishing Touches

6. Rest the Roast

Once the beef is done roasting, remove it from the oven and let it rest for at least 15 minutes before breaking the salt crust.

Carefully crack the salt crust and remove it from the roast. Slice the beef and serve it garnished with chopped parsley and lemon wedges.
