Method
Preparation
- 1
Prepare the Prime Rib
Remove the prime rib roast from the refrigerator and allow it to come to room temperature for about 1 hour before cooking.
- 2
Preheat the Oven
Preheat your oven to 450°F (232°C).
- 3
Season the Roast
In a small bowl, mix together the kosher salt, black pepper, garlic powder, rosemary, thyme, and olive oil. Rub this mixture all over the prime rib roast, ensuring it is evenly coated.
Cooking
- 4
Roast the Prime Rib
Place the seasoned prime rib roast on a roasting rack in a roasting pan, bone side down. Insert a meat thermometer into the thickest part of the meat, avoiding the bone. Roast in the preheated oven for 20 minutes.
- 5
Reduce the Temperature
After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue to roast until the thermometer reads 130°F (54°C) for medium-rare, approximately 1.5 to 2 hours.
- 6
Rest the Meat
Once the desired temperature is reached, remove the roast from the oven and tent it loosely with foil. Allow it to rest for at least 20-30 minutes before carving.
Serving
- 7
Carve and Serve
Carve the prime rib into slices and serve with horseradish sauce and au jus, if desired.
