    Prepare the Turkey

    Thaw the turkey in the refrigerator for 1-2 days prior to cooking. Remove the giblets and neck from the turkey cavity.

    Season the Turkey

    Pat the turkey dry with paper towels. Rub the entire turkey with olive oil, then season generously with salt and black pepper both inside and outside.

    Mix Brown Sugar and Herb Mixture

    In a small bowl, combine brown sugar, rosemary, thyme, sage, minced garlic, lemon zest, and lemon juice to form a paste.

    Apply Herb Mixture

    Spread the brown sugar herb mixture under the skin of the turkey breast and all over the outside.

Stuffing (optional)

    Prepare the Stuffing

    In a large skillet, sauté chopped onion and celery in a little olive oil until softened. Mix in the stale bread cubes, and then add chicken broth until the mixture is moist but not soggy. Season with salt and pepper to taste.

    If using stuffing, loosely fill the turkey cavity with the prepared stuffing. Do not pack it too tightly.

    Preheat the Oven

    Preheat your oven to 325°F (165°C).

    Roast the Turkey

    Place the turkey on a rack in a roasting pan. Roast for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). Baste the turkey with its juices every 30-45 minutes.

    Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.
