Pastry Preparation

    Make the Dough

    In a large bowl, combine 1.5 cups all-purpose flour and 0.5 tsp salt. Cut in 0.5 cups cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add 3 tablespoons of ice water, mixing until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Caramelize the Onions

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 medium yellow onions, thinly sliced, and cook slowly, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized.

    Cook the Mushrooms

    Add 2 cups of sliced mushrooms and 2 minced garlic cloves to the skillet with the onions. Cook for an additional 5-7 minutes until the mushrooms are tender and any liquid has evaporated.

    Season the Mixture

    Stir in 1 teaspoon of fresh thyme leaves, and season with 0.5 tsp salt and 0.25 tsp black pepper. Remove from heat and allow to cool slightly.

    Prepare the Custard

    In a bowl, whisk together 2 large eggs and 0.5 cups heavy cream until well combined. Stir in the cooled mushroom and onion mixture, along with 1 cup of shredded Gruyere cheese.

Assembling and Baking

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into rounds to fit into your tartlet pans.

    Assemble the Tartlets

    Place the dough rounds into the tartlet pans, pressing gently into the bottoms and sides. Fill each tartlet shell with the mushroom and onion custard mixture.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is set.

    Allow the mushroom tartlets to cool for a few minutes before serving. Enjoy warm or at room temperature.
