Method

For the Molten Chocolate Lava Cake

    Preheat the Oven

    Preheat your oven to 200°C (390°F) and grease four ramekins with butter. Dust with cocoa powder to prevent sticking.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method), stirring until smooth. Remove from heat and let it cool slightly.

    Mix Ingredients

    In a separate bowl, whisk together the granulated sugar, eggs, vanilla extract, and salt until well combined. Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously.

    Add Flour

    Sift in the all-purpose flour and gently fold until just combined. Do not overmix.

    Fill Ramekins

    Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

    Bake

    Bake in the preheated oven for 12-14 minutes until the edges are firm but the center is still soft.

    Cool and Unmold

    Let the cakes cool for 1 minute, then carefully invert them onto plates. Serve immediately.

For the Pistachio Gelato

    Prepare Pistachios

    In a food processor, blend the unsalted pistachios until finely chopped. Set aside.

    Heat Milk and Cream

    In a saucepan, combine the milk and heavy cream. Heat over medium heat until just steaming, but do not boil.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the granulated sugar and egg yolks until pale and thick.

    Temper the Egg Mixture

    Slowly pour the hot milk mixture into the egg mixture, whisking continuously to temper the eggs.

    Cook the Mixture

    Return the entire mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

    Add Pistachios and Vanilla

    Remove from heat and stir in the crushed pistachios and vanilla extract. Let it cool.

    Chill and Churn

    Refrigerate the mixture for at least 4 hours, then churn in an ice cream maker according to the manufacturer’s instructions.

For the Fresh Berry Compote

    Combine Ingredients

    In a saucepan, combine the mixed berries, granulated sugar, and lemon juice.

    Cook the Compote

    Cook over medium heat for about 5-7 minutes, stirring occasionally, until the berries have released their juices and the mixture has thickened slightly.

    Cool and Serve

    Remove from heat and let cool before serving. Serve the compote over the molten chocolate lava cakes and gelato.
