Method
Mediterranean Sea Bass
- 1
Prepare the Sea Bass
Preheat the oven to 400°F (200°C). In a small bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper.
- 2
Marinate the Fish
Place the sea bass fillets in a baking dish and pour the marinade over them. Let it sit for 15 minutes while you prepare the other components.
- 3
Bake the Sea Bass
Bake the marinated sea bass in the preheated oven for 15-20 minutes or until cooked through and flaky.
Potato Parmesan Gnocchi
- 4
Cook the Potatoes
Boil the potatoes in salted water until tender. Drain and let them cool before peeling.
- 5
Make the Dough
Mash the cooled potatoes and mix with flour, Parmesan cheese, egg, and salt until a dough forms.
- 6
Shape the Gnocchi
Roll the dough into ropes and cut them into small pieces. Use a fork to create ridges on each piece.
- 7
Cook the Gnocchi
Boil a pot of salted water and add the gnocchi. Cook until they float to the top, about 2-3 minutes. Remove and set aside.
Clam Bolognese
- 8
Sauté the Aromatics
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until translucent.
- 9
- 10
Finish with Basil
Stir in fresh basil just before serving.
Autumn Vegetables
- 11
Prepare the Vegetables
Trim and cut carrots and Brussels sprouts into bite-sized pieces.
- 12
Roast the Vegetables
Toss the vegetables with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven at 400°F (200°C) for 20-25 minutes until tender and caramelized.
