Macaroni and Cheese Base

Method

Prepare Macaroni

    Cook the Elbow Macaroni

    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make Cheese Sauce

    Create a Roux

    In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until bubbly.

    Add Milk

    Slowly add the milk to the roux while whisking continuously to avoid lumps. Cook for about 5 minutes until the mixture thickens.

    Incorporate Cheeses

    Reduce the heat to low, and add sharp cheddar, Gruyère, Parmesan, and cream cheese. Stir until all the cheese is melted and the sauce is smooth.

    Season the Sauce

    Season the cheese sauce with salt and black pepper to taste.

Combine and Serve

    Mix Pasta and Cheese Sauce

    In a large mixing bowl, combine the cooked macaroni with the cheese sauce, stirring until the pasta is well coated.

    Spoon the mac and cheese mixture into martini glasses for individual servings.
