For the Lobster Filling

    Prepare the Lobster Filling

    In a medium bowl, combine lobster meat, cream cheese, mayonnaise, lemon juice, Old Bay seasoning, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated. Set aside.

For the Mac & Cheese

    Cook the Elbow Macaroni

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in flour to create a roux and cook for 1-2 minutes. Gradually whisk in milk, stirring until the mixture thickens.

    Add Cheese

    Remove the pot from the heat and add the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Stir until the cheese has melted and the sauce is smooth. Combine the cheese sauce with the cooked macaroni.

    Combine Lobster and Mac & Cheese

    Gently fold the prepared lobster filling into the mac and cheese mixture until evenly distributed.

    Prepare the Breading Station

    Set up a breading station with three bowls: one with flour (seasoned with salt and pepper), one with a beaten egg, and one with panko breadcrumbs.

    Using your hands, scoop out a portion of the lobster mac & cheese mixture and form into bite-sized balls or patties. Dredge each piece in flour, dip in the beaten egg, and then coat with panko breadcrumbs.

Cooking the Bites

    In a large skillet, heat oil over medium heat. Once hot, carefully add the mac & cheese bites, cooking in batches if necessary, until golden brown and crispy on all sides, about 3-4 minutes per side.
