Method

Preparation of Quinoa

  1. 1

    Rinse Quinoa

Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.

  2. 2

    Cook Quinoa

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over high heat.

  3. 3

    Finish Cooking Quinoa

Once boiling, reduce heat to low, cover, and simmer for 15 minutes until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

  4. 4

    Fluff Quinoa

Fluff the quinoa with a fork and set aside.

Cooking the Vegetables

  1. 5

    Chop Vegetables

While the quinoa is cooking, chop the zucchini and bell pepper into bite-sized pieces.

  2. 6

    Sauté Zucchini and Bell Pepper

In a large skillet, heat the olive oil over medium heat. Add the chopped zucchini and bell pepper, and sauté for about 5 minutes until they begin to soften.

  3. 7

    Add Cherry Tomatoes and Spinach

Add the cherry tomatoes and spinach to the skillet. Cook for another 3-4 minutes until the spinach wilts and the tomatoes burst.

Final Assembly

  1. 8

    Add Seasonings

Minced the garlic and add it to the skillet, along with lemon juice, salt, black pepper, and fresh basil. Stir to combine and cook for an additional 2 minutes.

  2. 9

    Mix Quinoa with Vegetables

Combine the cooked quinoa with the sautéed vegetables in the skillet. Stir well to combine all ingredients.

  3. 10

    Serve

Taste and adjust seasoning if necessary. Serve warm as a nutritious seasonal dish.
