Vegetarian Meatballs

Prepare the Meatball Mixture
In a large bowl, combine cooked quinoa, chickpeas, bread crumbs, grated Parmesan cheese, eggs, minced garlic, chopped parsley, salt, and black pepper. Mix well until all ingredients are combined.

Form the Meatballs
Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Cook the Meatballs
Drizzle olive oil over the meatballs and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown and firm to the touch.
Caramelized Onions

Sauté the Onions
In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and sprinkle with salt. Cook, stirring occasionally, for about 15-20 minutes, or until the onions are soft and caramelized.

Add Balsamic Vinegar
Once the onions are caramelized, stir in the balsamic vinegar and cook for an additional 2-3 minutes. Remove from heat and set aside.

Wash and cut the tops off the sweet mini peppers. Remove any seeds if necessary, and set aside.
