Method

Preparing the Salmon

    Marinating the Salmon

    In a bowl, combine honey, soy sauce, olive oil, minced garlic, salt, and black pepper. Whisk until well combined. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Grilling the Salmon

    Preheat the grill to medium-high heat. Remove the salmon from the marinade, letting the excess drip off. Grill the salmon for about 4-5 minutes per side, or until cooked through and flaky. Brush with remaining marinade during grilling for extra flavor.

Making the Miso-Romesco Sauce

    Blending the Sauce

    In a food processor, combine roasted red peppers, toasted almonds, miso paste, minced garlic, olive oil, red wine vinegar, paprika, and salt. Blend until smooth and creamy. Adjust seasoning if necessary. Set aside.

Preparing the Salad

    Chopping the Vegetables

    Slice the sweet bell peppers into thin strips. In a large bowl, combine sliced peppers, goldenberries, and chopped basil.

    Dressing the Salad

    Drizzle olive oil and lemon juice over the salad. Season with salt to taste and toss gently to combine.

Plating the Dish

    Serving

    On a large plate, place the grilled salmon fillet and top with a generous spoonful of miso-romesco sauce. Serve alongside the sweet pepper and goldenberry salad.
