Chimichurri

Method

Preparation of Chimichurri

  1. 1

    Make the Chimichurri Sauce

In a food processor, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until smooth and well combined. Taste and adjust seasoning if necessary.

Preparing the Corn

  1. 2

    Prepare the Corn

Bring a large pot of salted water to a boil. Add the corn on the cob and cook for about 5-7 minutes until tender. Remove from water, let cool slightly, and then cut the kernels off the cob. In a skillet, melt the butter over medium heat, add the corn, and season with salt and pepper. Sauté for a few minutes until heated through.

Cooking the Swiss Chard

  1. 3

    Sauté the Swiss Chard

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped Swiss chard and cook, stirring occasionally, until wilted (about 3-4 minutes). Season with salt and pepper to taste.

Grilling the Bronzino

  1. 4

    Prepare the Bronzino

Preheat your grill to medium-high heat. Rub the cleaned bronzino inside and out with olive oil, salt, and black pepper. Squeeze the juice of half a lemon inside each fish. Make a few diagonal slashes on each side of the fish for even cooking.

  2. 5

    Grill the Fish

Place the bronzino on the grill and cook for about 6-8 minutes per side, or until the fish is cooked through and has nice grill marks. Remove from the grill and let it rest for a few minutes before serving.

Serving

  1. 6

    Plate the Dish

On a serving platter, arrange the grilled bronzino, sautéed Swiss chard, and sautéed corn. Drizzle the chimichurri sauce generously over the fish and serve with lemon wedges on the side.
