Preparing the Fillet Mignon

    Season the Steaks

    Sprinkle the fillet mignon pieces with salt and black pepper on both sides. Let them sit at room temperature for about 20 minutes.

    Preheat the Skillet

    Heat a cast-iron skillet over medium-high heat until hot.

    Cook the Steaks

    Add the fillet mignon to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Add Herb Butter

    In the last minute of cooking, add the herb butter to the skillet. Spoon the melted butter over the steaks as they finish cooking.

Making the Sautéed Spinach

    Heat the Oil

    In a separate skillet, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.

    Add Spinach

    Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.

    Season the Spinach

    Season with salt and black pepper, stirring to combine.

Preparing the Atelier Sauce

    Sauté Shallots

    In the same skillet used for the fillet mignon, add the chopped shallots and sauté for about 2 minutes until translucent.

    Deglaze the Pan

    Pour in the red wine and scrape the bottom of the pan to deglaze. Allow it to simmer for about 5 minutes.

    Add Broth

    Add the beef broth and continue to simmer until the sauce reduces by half, about 10 minutes.

    Finish the Sauce

    Whisk in the butter, salt, and black pepper into the sauce until smooth.
