Preparing the Fillet Mignon

Season the Steaks
Sprinkle the fillet mignon pieces with salt and black pepper on both sides. Let them sit at room temperature for about 20 minutes.

Preheat the Skillet
Heat a cast-iron skillet over medium-high heat until hot.

Cook the Steaks
Add the fillet mignon to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Making the Sautéed Spinach

Add Spinach
Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.

Season the Spinach
Season with salt and black pepper, stirring to combine.
Preparing the Atelier Sauce

Sauté Shallots
In the same skillet used for the fillet mignon, add the chopped shallots and sauté for about 2 minutes until translucent.

Add Broth
Add the beef broth and continue to simmer until the sauce reduces by half, about 10 minutes.

Whisk in the butter, salt, and black pepper into the sauce until smooth.
