Method

Prepare the Filet Mignon

    Season the Steak

    Sprinkle salt and crushed black peppercorns evenly on both sides of the filet mignon. Press the seasonings into the meat.

    Heat the Oil

    In a large skillet, heat olive oil over medium-high heat until hot but not smoking.

    Sear the Steak

    Add the filet mignon to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Add butter during the last minute of cooking and baste the steak.

    Rest the Steak

    Transfer the steak to a plate and let it rest for 5 minutes before slicing.

Make the Garlic Spinach

    Sauté the Garlic

    In another skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Cook the Spinach

    Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and black pepper.

Prepare the Au Poivre Sauce

    Sauté the Shallots

    In the same skillet used for the steak, melt butter over medium heat. Add finely chopped shallots and sauté until translucent, about 2 minutes.

    Deglaze the Pan

    Carefully add brandy or cognac to the skillet, scraping up any browned bits. Allow to reduce slightly, about 1-2 minutes.

    Add Cream and Broth

    Stir in heavy cream and beef broth. Bring to a simmer and let cook until slightly thickened, about 3-5 minutes. Season with salt and black pepper to taste.
