Pork Chop Preparation

    Season the Pork Chops

    Season the Berkshire pork chops generously with salt and black pepper on both sides.

    Sear the Pork Chops

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for 4-5 minutes on each side until they develop a golden-brown crust. Remove from skillet and set aside.

Mushroom and Cherry Sauce Preparation

    Sauté Mushrooms and Garlic

    In the same skillet, add the sliced shiitake mushrooms and minced garlic. Sauté for about 4-5 minutes, until the mushrooms are browned and the garlic is fragrant.

    Add Cherries and Broth

    Stir in the sweet cherries and the chicken broth. Bring to a simmer and cook for about 5 minutes, allowing the flavors to meld.

    Incorporate Mustard and Butter

    Add the French mustard and butter to the sauce, stirring until the butter is melted and the sauce is smooth. Add in the fresh thyme leaves.

    Return Pork Chops to the Skillet

    Place the seared pork chops back into the skillet, spooning the sauce over the top. Cover and let simmer on low heat for an additional 5-7 minutes until the pork is cooked through (internal temperature should reach 145°F or 63°C).
