Oysters Preparation

Select Fresh Oysters
Choose 6 East Coast oysters and 6 West Coast oysters. Ensure they are fresh and stored properly on ice.

Shuck Oysters
Using an oyster knife, carefully shuck each oyster, being cautious of the shell edges. Discard the top shell and place the oysters on a platter with the deeper shell side down to retain their juices.
Mignonette Sauce Preparation

Mix Ingredients
In a small bowl, combine 1 cup of red wine vinegar, 2 finely chopped shallots, and 1 teaspoon of freshly cracked black pepper. Stir well to combine.

Chill Sauce
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.
Cocktail Sauce Preparation

Combine Ingredients
In another small bowl, mix together 1 cup of ketchup, 2 tablespoons of horseradish, and 1 tablespoon of lemon juice. Add hot sauce to taste.

Stir the mixture until well combined and refrigerate for about 15 minutes to enhance the flavors.
