Marinade

Method

Marinade

  1. 1

    Prepare the Marinade

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk together until well combined.

Chicken Skewers

  1. 2

    Marinate the Chicken

Add the chicken pieces to the marinade, making sure they are well coated. Cover and refrigerate for at least 30 minutes.

  2. 3

    Prepare the Skewers

After marinating, take the chicken out of the refrigerator. Thread the marinated chicken pieces, bell peppers, and red onion onto the soaked wooden skewers.

  3. 4

    Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Chicken Fingers

  1. 5

    Prepare the Breading Station

Set up three bowls: one with flour, one with the beaten egg, and one with breadcrumbs mixed with grated Parmesan cheese, salt, and black pepper.

  2. 6

    Bread the Chicken

Dip each chicken strip into the flour, shaking off the excess, then into the egg, and finally into the breadcrumb mixture, pressing to adhere.

  3. 7

    Fry the Chicken Fingers

In a large skillet, heat oil over medium-high heat. Once hot, carefully add the breaded chicken strips and fry for 4-5 minutes on each side, or until golden brown and cooked through. Drain on paper towels.
