Method
Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or a pot, combine the rinsed sushi rice and water. If using a rice cooker, follow the manufacturer's instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve. Once the rice is cooked, transfer it to a large bowl, drizzle the vinegar mixture over it, and gently fold it in using a wooden spoon. Let it cool to room temperature.
Preparing Fillings

Prepare Cucumber
Wash and peel the cucumber. Cut it into thin strips (julienne) for easy rolling.

Prepare Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin strips.

Prepare Crab
If using real crab meat, shred it into bite-sized pieces. If using imitation crab, break it up into strips.

Prepare Cream Cheese
Soften the cream cheese slightly, making it easier to spread onto the sushi.
Rolling the Sushi

Lay Out Nori
Place one sheet of nori on a bamboo sushi mat, shiny side down.

Spread Sushi Rice
Wet your hands to prevent sticking and take about a handful of sushi rice. Spread it evenly over the nori, leaving about an inch at the top edge.

Add Fillings
On the rice-covered nori, arrange the cucumber, avocado, crab meat, and cream cheese in a line across the center.

Roll the Sushi
Starting from the edge closest to you, roll the sushi tightly away from you, using the mat to help. When you reach the exposed nori edge, wet it with a little water to seal the roll.

Slice the Sushi
Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to keep the edges clean.
Serving

Garnish and Serve
Sprinkle sesame seeds over the sliced rolls. Serve the California (or Alaska) rolls with soy sauce, wasabi, and pickled ginger on the side.
