Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to your rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix the rice vinegar, sugar, and salt in a separate bowl until dissolved, then fold this mixture into the rice gently with a wooden spatula. Let cool to room temperature.

Slice the Avocado
Cut the avocado in half, remove the pit, and slice it into thin strips.

Peel the cucumber if desired and cut it into thin matchstick pieces.

If using imitation crab meat, shred it into smaller pieces or leave it in longer strips, depending on your preference.

Lay Out Nori
Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat.

Spread Sushi Rice
Wet your hands to prevent sticking, then take about 1 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to form a tight roll. Once rolled, seal the edge of the nori with a little water.

Slice and Serve
With a sharp knife, slice the roll into 6-8 pieces. Sprinkle sesame seeds on top if desired. Serve with soy sauce, wasabi, and pickled ginger on the side.
