Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Dough Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and add the yeast mixture and olive oil.

    Knead Dough

    Mix until a shaggy dough forms, then transfer to a floured surface. Knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Margherita Sauce Preparation

    Prepare Sauce

    In a blender, combine canned San Marzano tomatoes, garlic, salt, and sugar. Blend until smooth.

    Cook Sauce

    In a saucepan over medium heat, add olive oil and the tomato mixture. Simmer for about 15-20 minutes until slightly thickened.

Pizza Assembly

    Preheat Oven

    Preheat your brick oven to around 700°F (370°C) if possible.

    Shape the Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide into two equal portions and shape each into a ball. Let it rest for another 10 minutes.

    Form Pizza Base

    Flatten each ball and stretch it out to form a 12-inch pizza base. Place on a pizza peel or baking sheet.

    Add Sauce and Toppings

    Spread a thin layer of Margherita sauce over the base, leaving a small border for the crust. Tear fresh mozzarella into pieces and distribute evenly over the sauce. Sprinkle with dried oregano and fresh basil leaves.

    Drizzle a tablespoon of extra virgin olive oil over the top of the pizza.

    Bake Pizza

    Transfer the pizza to the preheated brick oven and bake for about 90 seconds to 2 minutes or until the crust is golden brown and the cheese is bubbling.
