Braised Short Ribs

Method

Braised Short Ribs

    Prepare the Ribs

    Preheat your oven to 350°F (175°C). Season the beef short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear on all sides until browned, about 3-4 minutes per side. Remove them from the pot and set aside.

    Sauté Vegetables

    Add the diced onion, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Deglaze

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Bring to a boil and let it reduce by half.

    Add Broth and Herbs

    Add the beef broth, thyme, and bay leaves to the pot. Return the short ribs to the pot.

    Braise

    Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, until the meat is tender and falling off the bone.

    Rest the Ribs

    Remove the pot from the oven and let the short ribs rest for 15 minutes before serving.

Aged Blue Cheese-Potato Puree

    Boil the Potatoes

    In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add butter, heavy cream, aged blue cheese, salt, and black pepper.

    Puree

    Using a potato masher or immersion blender, puree the mixture until smooth and creamy.

Heirloom Carrots

    Prepare the Carrots

    Preheat the oven to 400°F (200°C). In a bowl, toss the heirloom carrots with olive oil, salt, black pepper, and honey.

    Roast

    Spread the carrots in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, until tender and caramelized.
