Preparation

Prepare the Herbed Ricotta
In a bowl, combine ricotta cheese, chopped basil, chopped parsley, lemon zest, and 0.5 tsp of salt. Mix well until all ingredients are incorporated. Set aside.

Prepare the Vegetables
Trim the ends of the Brussels sprouts and cut them in half. Slice the sweet bell peppers into strips. Mince the garlic cloves.
Cooking the Sirloin

Season the Sirloin
Rub the Rockefeller sirloin with salt and black pepper evenly on all sides.

Sear the Sirloin
In a large skillet, heat olive oil over medium-high heat. Once hot, add the sirloin and sear for about 4-5 minutes on each side until browned.

Braised Cooking
Add beef broth to the skillet, cover, and reduce the heat to low. Let it braise for about 1.5 to 2 hours, or until the meat is tender.
Cooking the Vegetables

Sauté the Vegetables
In a separate large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Brussels Sprouts and Peppers
Add the halved Brussels sprouts and sweet bell peppers to the skillet. Season with salt and sauté for about 10-15 minutes until the vegetables are tender and slightly caramelized.
Serving

Plate the Dish
Once the sirloin is done braising, remove it from the skillet and let it rest for a few minutes. Slice the sirloin and serve it on a plate with the sautéed Brussels sprouts and sweet peppers. Top with a generous dollop of herbed ricotta.
