Preparing the Roasted Veggies

    Roast the Vegetables

    Preheat your oven to 400°F (200°C). Cut the bell peppers, zucchini, and red onion into bite-sized pieces. In a bowl, combine the chopped vegetables with olive oil, salt, and black pepper, ensuring they are evenly coated. Spread the mixture on a baking sheet in a single layer and roast in the oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

Making the Romesco Spread

    Blend the Ingredients

    In a blender or food processor, combine the roasted red peppers, almonds, garlic, olive oil, red wine vinegar, smoked paprika, and salt. Blend until smooth, adding a little water if necessary to achieve a spreadable consistency. Taste and adjust seasoning as desired.

Assembling the Burger

    Cook the Beyond Burger Patties

    In a skillet over medium heat, cook the Beyond Burger patties for 3-4 minutes on each side, or until heated through and browned.

    Prepare the Avocado

    While the patties are cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces.

    Build the Burger

    Toast the burger buns if desired. Spread a generous amount of Romesco spread on the bottom bun, layer with mixed greens, place the cooked Beyond Burger patty on top, then add avocado slices. Finish with the top bun.

    Serve the burger with a side of either mixed greens or pub fries, as per preference.
