Prepare Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a fine-mesh sieve and rinse under cold running water until the water runs clear, about 2-3 minutes.

Cook the Sushi Rice
Combine the rinsed sushi rice and water in a rice cooker or pot. If using a rice cooker, follow the manufacturer's instructions. If using a pot, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl, and gently fold in the vinegar mixture with a spatula. Let it cool to room temperature.

Prepare Crab and Cream Cheese
If using crab sticks, cut them into thin strips. If using cream cheese, ensure it is soft and spreadable.
Assemble the Sushi Rolls

Lay Out Nori
Place a bamboo sushi mat on a clean surface. Place a sheet of nori, shiny side down, on the mat.

With wet hands, take about a cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Arrange the cucumber, carrot, avocado, crab sticks, and cream cheese in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, start rolling the nori away from you, applying gentle pressure to form a tight roll. Once rolled, seal the edge of the nori with a little water.

Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to prevent sticking.
