Egg Preparation

    Hard Boil the Eggs

    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 9-10 minutes. Remove from heat and transfer eggs to an ice bath to cool for at least 5 minutes.

Sausage Mixture

    Prepare the Sausage Filling

    In a mixing bowl, combine ground sausage meat, dried sage, salt, and black pepper. Mix until well combined.

Assemble Scotch Eggs

    Wrap the Eggs

    Peel the cooled eggs and take a portion of the sausage mixture (about the size of a golf ball). Flatten it in your hand and place the egg in the center. Carefully wrap the sausage around the egg, ensuring it is completely covered.

    Bread the Eggs

    Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each sausage-wrapped egg in flour, dip in beaten egg, and coat with breadcrumbs.

Frying

    Deep Fry the Scotch Eggs

    In a deep frying pan, heat vegetable oil to 350°F (180°C). Carefully place the breaded eggs into the hot oil, a few at a time, and fry for about 5-7 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Mustard Sauce

    In a small bowl, mix together Dijon mustard and honey until well combined. Adjust sweetness to taste.
