Corned Beef Filling

Egg Roll Wrappers

Method

Prepare Filling

  1. 1

    Cook Corned Beef

In a large pot, add the corned beef and cover with water. Bring to a boil, then reduce to a simmer. Cook for about 2.5 to 3 hours, or until tender. Let cool, then shred or chop the beef.

  2. 2

    Mix Filling

In a large mixing bowl, combine the shredded corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing. Mix well until all ingredients are evenly incorporated.

Assemble Rolls

  1. 3

    Fill Egg Rolls

Take one egg roll wrapper and place it on a clean surface with a corner pointing towards you. Place about 2 tablespoons of the corned beef filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly to seal. Repeat with remaining wrappers and filling.

Fry Rolls

  1. 4

    Heat Oil

In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry Egg Rolls

Carefully add the assembled egg rolls to the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for 3-4 minutes, or until golden brown and crispy. Use a slotted spoon to remove the rolls and drain on paper towels.
