Pickled Cucumbers & Onions

Jalapenos

Method

Pulled Pork

  1. 1

    Prepare the Marinade

In a bowl, mix the brown sugar, paprika, cumin, salt, and black pepper. Rub this mixture all over the pork shoulder.

  2. 2

    Cook the Pork

Place the pork shoulder in a slow cooker. Add chopped onions, minced garlic, apple cider vinegar, and chicken broth. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker to absorb the juices.

Sweet Garlic Aioli

  1. 4

    Mix the Aioli

In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until smooth.

Pickled Cucumbers & Onions

  1. 5

    Prepare the Pickling Solution

In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil and stir until sugar is dissolved.

  2. 6

    Pickle the Vegetables

Place the sliced cucumbers and onions in a jar. Pour the hot pickling solution over the vegetables. Let it cool to room temperature, then refrigerate for at least 1 hour before serving.

Jalapenos

  1. 7

    Prepare the Jalapenos

Slice the jalapenos into thin rings. Set aside for serving.
