Cooking Noodles

Boil Soba Noodles
Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions, usually about 6-8 minutes, until al dente.

Drain and Rinse
Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process and remove excess starch.
Preparing Vegetables

Chop Vegetables
While the noodles are cooking, wash and thinly slice the red bell pepper, cucumber, red onion, and carrots into matchstick shapes.

Prepare Pickled Ginger
Open the container of pickled ginger and set aside for serving.
Making Vinaigrette

Combine Ingredients
In a small bowl, whisk together the soy sauce, honey, and lime juice until well combined.
Assembling the Dish

Combine Noodles and Vegetables
In a large mixing bowl, add the cooled soba noodles and the chopped vegetables. Pour the vinaigrette over and toss gently to coat everything evenly.

Plate the soba noodle salad and top with pickled ginger. Serve chilled or at room temperature.
