Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Breading
In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. This will be your breading mixture.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Bread the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the breading mixture, ensuring it is fully coated, shaking off any excess flour.

Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Let it rest for a few minutes.

Assemble the Sandwich
On the bottom half of each burger bun, spread a generous amount of ranch dressing. Top with a piece of fried chicken, crumbled bacon, lettuce leaves, tomato slices, and red onion slices. Place the top half of the bun on and serve immediately.
