Preparing the Filling

Prepare the Jalapenos
Slice the jalapenos in half lengthwise and remove the seeds. Set aside.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels and crumble into small pieces.

Make the Cheese Mixture
In a mixing bowl, combine cream cheese, crumbled bacon, shredded cheddar, and shredded mozzarella. Mix until well combined.
Assembling the Poppers

Fill the Jalapenos
Take each jalapeno half and fill it generously with the cheese mixture.

Wrap with Egg Roll Wrapper
Place a filled jalapeno on an egg roll wrapper, fold the sides in, and roll tightly to enclose the filling. Seal with a little water if needed.
Preparing the Jalapeno Lime Aioli

Mix the Aioli
In a small bowl, whisk together mayonnaise, lime juice, finely chopped jalapeno, garlic powder, salt, and pepper until smooth. Set aside.
Frying the Poppers

Heat the Oil
In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Poppers
Carefully add the wrapped jalapeno poppers to the hot oil in batches, frying until golden brown, about 4-5 minutes. Remove and drain on paper towels.
Serving

Serve with Aioli
Serve the fried jalapeno poppers hot with the jalapeno lime aioli for dipping.
