Method
Fish
- 1
Prepare the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer while whisking until the batter is smooth and well combined.
- 2
Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).
- 3
Fry the Fish
Dip the cod fillets into the batter, allowing excess to drip off. Carefully place the battered fish in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Slaw
- 4
Make the Slaw
In a large mixing bowl, combine the shredded cabbage, shredded carrot, and chopped cilantro. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper. Pour the dressing over the slaw and toss well to combine. Let it sit for at least 10 minutes to allow the flavors to meld.
Spicy Mayo
