Prepare the batter
In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Gradually add the beer while mixing until a smooth batter forms.

Heat the oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter and fry the fish
Dip each cod fillet into the batter, ensuring it is well-coated. Carefully place the battered fish into the hot oil and fry for 4-6 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Prepare the potatoes
Peel the russet potatoes and cut them into thin strips or wedges, depending on your preference.

Soak the fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Heat the oil
In a separate deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the potatoes
Carefully place the dried potato strips into the hot oil in batches. Fry for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels. While hot, sprinkle with salt.
Malt Tartar Sauce

Mix the ingredients
In a small bowl, combine the mayonnaise, finely chopped sweet pickles, capers, lemon juice, and Dijon mustard. Mix well until all ingredients are fully incorporated.

Add salt to the tartar sauce to taste, mixing well. Adjust any other flavors as needed.
