    Soak the Chickpeas

    In a large bowl, cover 1 cup of dried chickpeas with water and let them soak overnight (8 hours).

    Prepare the Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and baking powder. Pulse until the mixture is coarse but holds together.

    Form the Falafel Balls

    Transfer the mixture to a bowl and stir in the flour gradually until the mixture can hold its shape. Shape the mixture into 1-inch balls or patties.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium heat until hot (around 350°F or 175°C).

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil, frying in batches for about 3-4 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.

Tzatziki Sauce

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture using a clean kitchen towel.

    Mix the Ingredients

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Stir until well mixed.

    Chill the Sauce

    Cover the tzatziki sauce and refrigerate for at least 30 minutes before serving to enhance the flavors.
