Teriyaki Pulled Chicken

Cook the Chicken
Place the boneless, skinless chicken breasts in a slow cooker. Add the teriyaki sauce, minced garlic, and grated ginger. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.

Shred the Chicken
Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the sauce. Keep warm.

Prepare the Vegetables
Slice the bell peppers and onion into thin strips.

Saute the Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced peppers and onion. Season with salt and black pepper. Saute for about 5-7 minutes until the vegetables are softened and slightly caramelized.

Assemble the Sandwich
Take a sub roll or hoagie bun and layer it with a generous amount of the teriyaki pulled chicken, followed by the sautéed peppers and onions. Top with slices of provolone cheese.
