Main Ingredients

Method

Preparation

  1. 1

    Cook the Sausage

In a large skillet over medium heat, add the olive oil. Once hot, crumble the Italian sausage into the skillet and cook until browned, approximately 5-7 minutes. Use a wooden spoon to break it apart as it cooks.

  2. 2

    Sauté Vegetables

Add the diced onion, minced garlic, and diced bell pepper to the skillet with the sausage. Sauté for another 4-5 minutes until the vegetables are tender.

  3. 3

    Add Mushrooms

Stir in the sliced mushrooms and continue to cook for an additional 3-4 minutes until the mushrooms are softened.

  4. 4

    Incorporate Tomatoes and Broth

Pour in the diced tomatoes (with their juice) and the chicken broth. Stir well to combine all ingredients.

  5. 5

    Season the Mixture

Add the dried oregano, salt, black pepper, red pepper flakes, and lemon juice. Mix well and bring the mixture to a simmer.

Cooking

  1. 6

    Simmer

Reduce the heat to low and let the mixture simmer for about 20-25 minutes, allowing the flavors to meld. Stir occasionally.

  2. 7

    Finish with Parsley

Once done, remove the skillet from heat. Stir in the chopped fresh parsley for a burst of freshness.

  3. 8

    Serve

Serve hot in bowls, optionally with crusty bread on the side to soak up the tangy sauce.
