Transfer the rinsed olives into a large bowl and cover them with fresh water. Let them soak for 24 hours, changing the water every 8 hours to reduce the bitterness.
Making the Brine

Prepare the Brine
In a medium saucepan, combine 500 ml of water, 50 g of salt, and 100 ml of white vinegar. Heat over medium heat until the salt is fully dissolved.

Add 2 crushed garlic cloves, 2 tablespoons of fresh thyme, and 1 teaspoon of black peppercorns to the brine mixture. Bring it to a gentle simmer for about 5 minutes to infuse the flavors.

Remove the saucepan from the heat and let the brine cool to room temperature.
Pickling the Olives

Once the olives have soaked, drain them and pack them tightly into sterilized jars.
