Method

Preparing the Olives

  1. 1

    Rinse the Olives

Place the green and black olives in a colander and rinse them thoroughly under cold water to remove any brine or preservatives.

  2. 2

    Soak the Olives

Transfer the rinsed olives into a large bowl and cover them with fresh water. Let them soak for 24 hours, changing the water every 8 hours to reduce the bitterness.

Making the Brine

  1. 3

    Prepare the Brine

In a medium saucepan, combine 500 ml of water, 50 g of salt, and 100 ml of white vinegar. Heat over medium heat until the salt is fully dissolved.

  2. 4

    Add Aromatics

Add 2 crushed garlic cloves, 2 tablespoons of fresh thyme, and 1 teaspoon of black peppercorns to the brine mixture. Bring it to a gentle simmer for about 5 minutes to infuse the flavors.

  3. 5

    Cool the Brine

Remove the saucepan from the heat and let the brine cool to room temperature.

Pickling the Olives

  1. 6

    Pack the Olives

Once the olives have soaked, drain them and pack them tightly into sterilized jars.

  2. 7

    Add the Brine

Pour the cooled brine over the packed olives, ensuring they are completely submerged. Leave a little space at the top of the jar.

  3. 8

    Seal and Store

Seal the jars with lids and store them in a cool, dark place for at least 2 weeks before consuming to allow the flavors to develop.
