Prepare the Filling
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the rice, salt, black pepper, and 1 cup of water or broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until rice is cooked. Once done, remove from heat and let cool. Stir in parsley, dill, and lemon juice.

Prepare the Grape Leaves
If using jarred grape leaves, rinse them under cold water to remove excess brine. Carefully separate the leaves and lay them flat on a clean surface.

Roll the Dolmades
Place a spoonful of the rice filling at the base of each grape leaf. Fold in the sides and roll tightly from the base to the tip. Repeat until all leaves and filling are used.

Cook the Dolmades
In a large pot, arrange the rolled dolmades seam-side down. Drizzle with remaining olive oil and add the remaining 1 cup of water or broth. Cover the pot and simmer on low heat for about 30 minutes.
