Kebabs Preparation
Marinate the Chicken
In a bowl, combine olive oil, minced garlic, cumin, paprika, salt, black pepper, and lemon juice. Add the chicken breast (cut into cubes) and mix well. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare Vegetables
Chop the bell peppers, red onion, zucchini, and mushrooms into bite-sized pieces. Keep the cherry tomatoes whole.
Assemble the Kebabs
Thread marinated chicken and vegetables onto skewers, alternating between chicken and vegetables. Aim for 4-5 pieces of chicken and vegetables per skewer.
Cooking the Pilaf
Cook the Pilaf
In a saucepan, melt butter over medium heat. Add chopped onion and sauté until softened. Stir in basmati rice and cook for 2 minutes until lightly toasted. Pour in chicken broth and add salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and liquid is absorbed.

Preheat a grill or grill pan over medium-high heat. Grill kebabs for about 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
