Kibbeh Preparation

Prepare the Cracked Wheat

Rinse the cracked wheat under cold water and soak it in a bowl with 1 cup of water for 30 minutes. Drain and squeeze out excess water.

Cook the Filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and sauté until they become translucent. Stir in the ground beef and cook until browned. Add the pine nuts, cinnamon, allspice, salt, and black pepper. Cook for another 5 minutes until everything is well combined. Remove from heat and let cool slightly.

Make the Kibbeh Shell

In a large bowl, combine the soaked cracked wheat, half of the ground beef mixture, and chopped parsley. Mix until well combined. Shape the mixture into small balls or patties.

Stuff the Kibbeh

Take each ball or patty of kibbeh mixture and make a small indentation in the center. Fill with the remaining ground beef mixture and seal the edges, reshaping into a ball if necessary.

Cook the Kibbeh

In the same skillet, heat the remaining olive oil over medium heat. Add the stuffed kibbeh balls and cook for about 5-7 minutes on each side until golden brown.
