Falafel Preparation

Soak Chickpeas
Soak the dried chickpeas in water overnight (at least 8 hours). Drain and rinse before using.

Blend Ingredients
In a food processor, combine the soaked chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until you get a coarse mixture. Scrape down the sides as needed.

Mix in Flour
Transfer the mixture to a bowl and stir in the flour. The mixture should hold together but not be too sticky. Adjust flour as necessary.

Shape Falafel
Using your hands, shape the mixture into small balls or patties, about 1-2 inches in diameter.

Fry Falafel
Carefully add the falafel balls to the hot oil in batches, frying for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
