    Make the Tomato Bisque

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

    Add Vegetables

    Stir in minced garlic and chopped carrot, cooking for another 2-3 minutes until fragrant.

    Add Tomatoes and Broth

    Pour in the crushed tomatoes and vegetable broth. Bring to a simmer and let it cook for about 15 minutes.

    Blend the Soup

    Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

    Finish the Bisque

    Stir in heavy cream, dried basil, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.

    While the bisque simmers, heat butter in a skillet over medium heat. Assemble grilled cheese sandwiches by placing a slice of cheese between two slices of bread.
