Chicken Marinade
Sesame Sauce
For frying
Method
Marinating the Chicken
Prepare the Marinade
In a large bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, and cornstarch. Mix well until cornstarch is dissolved.
Marinate the Chicken
Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
Preparing the Sauce
Make the Sesame Sauce
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and chili paste (if using) until well combined. Stir in toasted sesame seeds and set aside.
Cooking the Chicken
Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until hot but not smoking.
Fry the Chicken
Remove the chicken from the marinade and let any excess liquid drip off. Carefully add the chicken to the hot oil in batches, frying until golden brown and cooked through, about 4-5 minutes per side. Remove from oil and place on a paper towel-lined plate to drain.
Assembling the Dish
Combine Chicken and Sauce
Once all the chicken is cooked, return it to the skillet over low heat. Pour the sesame sauce over the chicken and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
Serve
Serve the sesame chicken over cooked rice and garnish with sliced green onions.
