Marinating Chicken

Prepare the Chicken

Cut the boneless, skinless chicken breast into bite-sized pieces and place them in a bowl.

Marinate

Add soy sauce and cornstarch to the chicken pieces. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.

Making Sweet & Sour Sauce

Combine Sauce Ingredients

In a medium saucepan, combine brown sugar, rice vinegar, ketchup, soy sauce, minced garlic, and minced ginger. Stir well to combine.

Cook Sauce

Heat the mixture over medium heat until it begins to boil. Reduce heat and let it simmer for about 5 minutes, stirring occasionally.

Cooking Chicken and Vegetables

Heat Oil

In a large skillet or wok, heat vegetable oil over medium-high heat.

Cook Chicken

Add the marinated chicken to the skillet and cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.

Add Vegetables

Add chopped bell pepper, onion, and pineapple chunks to the skillet with the chicken. Cook for an additional 3-4 minutes until the vegetables are tender.

Pour the sweet and sour sauce over the chicken and vegetables. Stir well to evenly coat everything in the sauce. Cook for another 2-3 minutes until heated through.

Serving

Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot over rice or noodles.
