Dough Preparation
Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Roll the Dough
After resting, divide the dough into small balls. Roll each ball into thin circles about 3 inches in diameter.

In a mixing bowl, combine the ground pork, finely chopped cabbage, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.
Assembly
Fill the Potstickers
Take one dough circle and place about 1 tablespoon of filling in the center. Moisten the edges with water and fold the dough over to create a half-moon shape. Pinch the edges to seal.
Repeat the Process
Continue this process with the remaining dough and filling until all potstickers are assembled.
Cooking
Fry the Potstickers
In a large skillet, heat the oil over medium heat. Place the potstickers in the skillet, flat side down, and cook for about 3-4 minutes until golden brown.
Steam the Potstickers
After frying, carefully add 1 cup of water to the skillet and cover immediately. Steam for 5-7 minutes until the water has evaporated and the potstickers are cooked through.
Serve
Remove the potstickers from the skillet and serve hot with your choice of dipping sauce.
