Slice the flank steak against the grain into thin strips. In a bowl, combine soy sauce and brown sugar. Add the beef strips to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes.

In a separate bowl, toss the marinated beef with cornstarch until evenly coated. This will help to create a crispy texture when cooked.

Mince the garlic cloves and ginger. Set aside for cooking.

Slice the green onions diagonally into small pieces, separating the green and white parts.
